CAPSICUM RICE
Capsicum rice is one of very simple and easy dish for kids lunch box and very helpful in busy mornings. It is very tasty and healthy dish.
Lets get started
INGREDIENTS
Capsicum - 2
Onions(medium) - 1
Lemon juice - 1 tbsp
Salt - to taste
Turmeric powder - 1 tsp
Cooked rice - 1 cup
TO GRIND
Channa dhal - 1 tsp
Jeera seeds - 1 tsp
Fennel seeds(sombu) - 1 tsp
Cloves - 4 to 5
Cinnamom stick - 1
Star anise - 1
Cashew - 4 to 5
Red chilli - 3
Coconut (grated) - 2 tbsp
PROCEDURE
- Cook the rice and allow it to cool
- In a kadai add all TO GRIND ingredients and dry roast till the fragrance comes out
- Grind it into a coarse powder
- In a kadai add in oil
- Add in chopped onions and saute till it gets cooked well
- Add in chopped capsicum and cook till becomes soft
- Add in salt and grinded masala and saute well
- Add in cooked rice and mix well
- Add in turmeric powder and mix well
- Add in lemon juice and mix well
- Serve hot with appalam, chips or vathal
STEP BY STEP PICTURES
Take all the TO GRIND ingredients
In a kadai add all TO GRIND ingredients except coconut saute for 2 to 3 mins
Add in grated coconuts
Saute till raw smell goes
Grind to coarse powder
Allow the rice to cool down
In a kadai add in oil
Add in chopped onions and saute till gets cooked
Add in chopped capsicum and saute till soft
Add in salt and saute
Saute well till it cooks well
Add in grinded masala powder
Mix everything evenly
Add in cooked rice
Mix everything well
Add in turmeric powder
Add in lemon juice and mix well
Serve hot with potato chips
TIPS
- Instead of capsicum you can use carrots also
- Cook the rice and cool down nicely otherwise it will be mushy
- You can also even use basmati rice
