VEGETABLE PULAO

                 VEGETABLE PULAO 

Vegetable pulao is one of the most favourite food of all the vegetarians. This is the one of the easiest lunch box receipe too. Kids will also love this receipe and also easy for moms to do this in the busy morning schedule. I learnt this receipe one of the famous blogger yummy tummy aarthi                                 

INGREDIENTS 

Basmati rice - 1 cup 
Ghee - 3 tbsp
Ginger garlic paste - 1 tsp 
Chilli power - 1 tsp 
Jeera powder - 1 tsp
Salt - to taste 
Turmeric powder - 1/2 tsp 
Onions(big) - 1  
Tomato (medium)- 1 
Carrots - 1 (big)
Beans - 10 
Potato - 1 (medium)
Capsicum - 1/2 
Mushrooms - 7 to 8 
Coriander leaves(finely chopped) - 1 handfull
Pudhina (mint)leaves (finely chopped) - 1 handfull
Green chilli - 1 (slited)
Milk - 1/2 cup 
Water - 2 cups 

SPICES 
Cinnamon sticks (patta) - 1 inch 
Elaichi (ellakka) - 4 to 5 
Fennel seeds - 1 tsp 
Bay leaf -1 
Star anise - 1 
Mace - 1
Cloves (krambu) - 2 to 3

PROCEDURE 
- Wash the basmati rice nicely in water and drain the water completely.
- In drained rice add in 1 tbsp ghee, chilli powder, jeera powder, ginger garlic paste, salt, turmeric powder and mix well and let it sit for 10 minutes 
- In a cooker add in 1 tbsp of ghee and add in all the spices and saute for 20 seconds 
- Add in onions and saute till it is cooked well 
- Add in all the veggies one by one and add little salt and saute till the raw smell goes 
- Add in marinated basmati rice and mix well
- Now add in chopped coriander leaves and pudhina leaves 
- Add in water and milk and allow it to boil
- Once comes to good boil close cooker and leave it for 10 minutes in low flame 
- Let the pressure releases on its own open the lid and add 1 tbsp of ghee and fluff the rice gently. 
- Serve hot with raita, fryumes, gobi 65,etc., 

STEP BY STEP PICTURES  

Wash the basmati rice 
Add in ginger garlic paste 
Add in chilli powder 
Add in jeera powder 
Add in salt 
Add in 1 tbsp of ghee 
Add in turmeric powder 
Mix everything well and let it sit for half an hour 
In a cooker add in 1 tbsp of ghee 


















Add in all the spices and saute for 30 seconds 












Add in sliced onions and saute till it becomes transparent 







Add in chopped carrots 











Add in chopped beans 











Add in tomatoes and green chilli 









Add in chopped capsicum










Add in chopped  potatoes 









Add in chopped mushrooms 











Add in salt and saute till raw smell goes away 








Add in marinated rice and give a good mix 







Add in chopped coriander and pudhina leaves and mix well








Add in water 









Add in milk 









Mix everything and once it boiles close the lid and cook for 10 min in low flame 








Once cooked add 1 tbsp of ghee and now vegetable pulao is redy to serve
