VINAYAGAR CHATURTHI SPECIAL
Festive mode started in our suruthy's cookbook.
When we were kids i will very excited when the vinayagar chaturthi will come. This is the ocassion where my mom make kozhukattai so i will excited for eating it.
Vinayagar chaturthi is one of most special festival in India. Everyone celebrate it very grandly. We make prasadams like kozhukattai, kara kozhukattai, sundal and many more.
Now here iam going to make ellu(sesame seeds) kozhukattai and kara kozhukattai using same dough. Iam going to show easy method of making kozhukattai dough stuffed with ellu puranam (sesame stuffing).
Lets gets started
KOZHUKATTAI DOUGH
Rice flour - 1 cup
Water - 1 1/2 cup
Salt - 1/2 tsp
Ghee - 1 tsp
PROCEDURE
- In a sauce pan add in water, salt and ghee
- Allow it to boil and simmer the flame
- Add in rice flour place the spatula in the vessel and close with the plate
- Leave it for 10 to 12 mins
- Mix it gently and allow it to cool
- Once it is cool down
- Knead everything together into soft dough. If needed u can sprinkle little water
- Now i have divided into two parts for ELLU (SESAME SEEDS) PURANA KOZHUKATTAI and KARA KOZHUKATTAI
STEP BY STEP PICTURES
In a sauce pan add in water
Add in salt
Add in ghee
Take rice flour and simmer the flame
Pour the rice flour in the vessel and donot mix it
Place the spatula inside the vessel as shown in picture
Close the sauce pan with the lid
After 10 minutes it will look like shown in pic
Mix everything evenly and allow it to cool
Pour everything in a plate and allow to cool
Once cooled knead into a soft dough if needed sprinkle some water. I have divided into two for ellu (sesame seeds) purana kozhukattai and kara kozhukattai
ELLU PURANA (SESAME STUFFED) KOZHUKATTAI
FOR PURANAM
Sesame seeds (ellu) - 1/2 cup
Jaggery (vellam) - 1/2 cup
PROCEDURE
- Dry roast the ellu (sesame seeds) in a kadai
- Add in a mixie jar and pulse it once
- Add in jaggery in a jar and powder it
- Ellu puranam(sesame stuffing) is ready
- Store it in a airtight container for future use
TO MAKE KOZHUKATTAI
- Take the dough and make into small balls
- Iam going to use chapathi press
- Take one small ball and place inbetween the chapathi press and press gently
- Remove the pressed dough and place the spoon of ellu puranam(sesame stuffing)
- Close the dough and seal the edges
- Prepare everything like that
- Cook them like how we make idlies for about 7 minutes
- Once cooked it will look shining.
- Remove everything to a plate and serve hot
STEP BY STEP PICTURES
FOR PURANAM
In a kadai add in ellu (sesame seeds)
Dry roast till it starts to splutter
Add in a mixie jar and pulse it for two times
Add in jaggery and grind it to powder without adding water
Ellu puranam(sesame filling) is ready
TO MAKE KOZHUKATTAI
Take one part of dough and pinch little dough and make into a balls
Take a chapathi press take some cover and grease it with oil as shown in picture
Take one ball and keep in the centre of the cover
Close the cover
Press gently dont overpress
Press gently and flatten like shown in picture
Take the flattened dough and keep some prepared ellu puranam (sesame filling)
Close it and seal the edges as shown in picture
Arrange everthing in a idli plate and steam it for 7 minutes.
Remove from steam once cooked. Once cooked it turns glossy on the top. Allow it to cool down for few seconds and transfer to a plate.
Take the dough and make into small balls
Place everything in a idli plates and steam for 7 mins
Once cooked it turns glossy
In a kadai add in oil
Add in mustard seeds and splutter
Add in curry leaves
Add in chopped green chillies
Add in steamed kozhukattai balls
Mix everything evenly and add in required salt
Add in chopped coriander leaves and mix evenly
Kara kozhukattai is ready to serve
