PUDHINA PARATHA

                    PUDHINA PARATHA 

Parathas are one of the dish which is made using stuffing. Pudhina paratha is one of the dish which i started doing when my son was small. He hate keerai and veggies so to make him eat some keerai i started doing chapathis with keerai in this following method but other than all other keerais this pudhina was the super duper hit. so iam sharing the receipe here 


           

INGREDIENTS 
Wheat flour - 1 cup 
Pudhina - 1 full kattu 
Jeera - 1 tsp 
Green chilli - 3 
Chilli powder - 1 tsp 
Garam masala - 1 tsp 
Salt - to taste 
Oil - for making chapathis 

PROCEDURE 
- In a kadai take 1 tsp of oil 
- Add in jeera and green chillies 
- Add in pudhina leaves and saute till leaves shrink and allow it to cool
- Once get cooled grind it to a paste 
- In a bowl add in wheat flour add in salt, chilli powder, garam masala and pudhina paste
- Make into soft chapathi dough and let it sit for 30 minutes 
- Roll the dough into chapathis and toast on tawa 
- Apply ghee on the paratha 
- Hot parathas are ready to serve 

SERVING SUGGESTIONS 
- Serve parathas with curd or pickle. 

STEP BY STEP PICTURES 



In a kadai add oil 






Add in jeera 






Add in green chillies 






Add in pudhina leaves and saute till it shrink and allow to cool down  





Once cool down grind to a smooth paste 








In a vessel add in wheat flour 







Add in salt 





Add in chilli powder and garam masala 





Add in grounded pudhina paste and make into chapathi dough 






Make the dough into balls and let it rest for 30 minutes 






Roll the dough into chapathi 








Place the rolled chapathi into tawa and toast till turns golden on both sides 





Apply ghee on the top 







Serve hot with curd or pickle or any curry. 


MINT LEMONADE

                    MINT LEMONADE  

Lemonade is the famous drink which most of us know. I just added the flavour of mint in it to make it even tastier

         
INGREDIENTS 

Mint leaves - 8 to 10 leaves 
Lemon  - 1 tbsp
Sugar - 2 tsp 
Plain soda - 1 cup 
Ice cubes - 10 
Water - 2 tsp 

PROCEDURE 
- Take a mint leaves in a morter and pestel and crush and squeeze mint juice from it 
- Take a sugar in a bowl and add water in it keep it aside till sugar melts 
- Take a serving glass add in sugar syrup add in crushed mint juice 
- Add in lemon juice and ice cubes 
- Add in plain soda 
- Finally add in two to three mint leaves and serve chill.

ITALIAN CHEESE FRITTATA

ITALIAN CHEESE FRITTATA

Italian cheese frittata is an italian dish which is very famous in Italy. I have tried this to make my kids eat some veggies. Cheese also very good for kids so i tried this and also a hit receipe.

         

INGREDIENTS 
Egg - 4
Carrots - 1 (medium size)
Potato - 1(medium size)
Capsicum - 1 (small)
Mushrooms - 10 pieces 
Salt - to taste
Pepper - 1 tsp 
Milk - 1 tbsp
Butter - 1 tbsp 
Cheese - 1/2 cup 

PROCEDURE 
- Break open the eggs in a bowl and add salt, pepper and milk beat nicely 
- Cut down the veggies and keep aside 
- In a kadai add in butter and let it melt 
- Once melted add in veggies one by one and saute well till it cookes soft.
- Add in salt and pepper for the veggies 
- Once cooked well spread the veggies evenly in the kadai 
- Add in the beaten eggs and simmer the flame 
- Now add in the grated cheese and cover with the lid 
- Cook till the eggs get cooked and cheese also melts well.
- Remove it to a tray and cut like pizza using pizza cutter and serve it hot. 

TIPS 
- Add veggies one by one. 
- Once you add the mushrooms cook it in a high flame otherwise it will  become very soggy 
- Add salt very little as cheese also contains salt and also we have added salt for eggs seperately 
- You  can add more veggies or less veggies according to your choice. You can add panner, broccoli,green peas, etc..,

In a bowl break open the eggs and beat well 



Add in pepper 



Add in salt 



Add in milk and beat well and keep aside 




Cut the veggies and keep ready 



In a kadai add in butter and let melt 



Add in carrots and saute well 



Add in potatoes 



Add in capsicum 




Add in mushrooms and saute well 


Add in salt and pepper and saute till it gets cooked well 




Spread the veggies evenly 



Add  in beaten eggs 


Spread evenly and add cheese on the top 



Cover with lid and cook in a low flame 


Once cooked remove in a plate and cut like pizza with a pizza cutter 
and serve hot.

IDLI UPMA

                          IDLI UPMA 

Idli upma is the receipe which we made using left over idlies.It is very tasty and yummy dish which I love the most.Now my kids also like very much.Now we need not worry if there is left over idlies we can easily make these idli upma within few steps 

             

INGREDIENTS 
Left over idlies - 10
Onions (finely chopped) - 1 medium
Turmeric - 1 tsp
Lemon - 1 tsp 
Coriander leaves (finely chopped )- 2 tbsp


TO TEMPER
Oil - 2 tsp
Mustard - 1 tsp
Channa dhal - 1 tbsp
Curry leaves- 1 strand
Green chillies - 3


PROCEDURE
- Crumble the idlies
- Heat oil in a kadai add TO TEMPER items and saute for 5 seconds
- Add in onions and turmeric
- Saute onions till transparent
- Add in crumbled idlies and give a good mix
- Add in lemon juice
- Add chopped coriander leaves
- Serve hot with pickle
