Foccacia bread

 FOCCACIA BREAD 

Foccacia bread is also called as an soup sticks. Usually they serve it with soups in Italian cuisine.They do this in different shapes as sticks, minibytes, French knot and so on. Here i have shown as just roll and bake into big bun and cut into sticks. You can try out different shapes using this. 



INGREDIENTS 

Maida - 1 cup 
Water - 1/2 cup 
Yeast - 1/2 tsp 
Salt - 1/2 tsp 
Sugar - 1/2 tsp 
Olive oil - 3 tbsp 
Garlic - 5 pods (chopped finely)
Rosemary - 1 tsp 

PROCEDURE
- In a bowl add half cup warm water 
- Add in sugar 
- Add in yeast and give a good mix and allow to rest in warm place for about 15 mins or till it gets activates 
- In a mixing bowl add in maida and salt and mix 
- Make a hole in the centre and add in activated yeast 
- Mix everything and knead into smooth dough and apply 1 tsp of olive oil 
- Seal with cling wrap and keep in warm place till the dough doubles 
- Once the dough doubles in amount give a punch and knead gently for about 1 minute 
- In a baking tray grease with oil 
- Spread the dough evenly in a tray and allow it to proof for another half an hour 
- Now make small dents in the dough and add garlic, rosemary and olive oil 
- Now bake it in preheated OTG for 20 mins 

STEP BY STEP PICTURES 




Add warm water in a bowl 









Add in sugar 








Add in yeast and give a good mix and allow for 10 mins till it activates 







In a mixing bowl add in maida 






Add in salt and mix evenly 







Add in activated yeast to maida 







Knead into a smooth dough 








Add olive oil to avoid dryness and keep it in a warm place till the dough double the size 





Now the dough is doubled in size 






Give one punch and knead slightly 






Grease the baking tray with olive oil






Place the dough in the tray 







Spread evenly and allow to proof for 30 minutes 






Once proofed for 30 minutes and make a dents 






Add chopped garlic 







Add in rosemary 







Add in olive oil 







Place it in a OTG and bake for about 20 minutes with 200 degree celsius 






Once baked remove from oven and allow to cool down 






Once cool down slice them into slices and serve hot with soup 




TIPS 

- Always preheat the oven for about 10 minutes before baking

- Different shapes of soup sticks can be made with this 

- Olive oil gives good flavour or you can substitue with normal cooking oil 

- Serve this with some tomato soup this will be the best combo

CHUTNEY DOSA

       CHUTNEY DOSA (CHUTNEY PANCAKE)

Chutney dosa is one the receipe which is made using leftover coconut chutney. This is one of my favourite dish. My mom used to do this whenever we have leftover chutney. This can be had as a evening snack.


INGREDIENTS 
Coconut chutney(leftover) - 1 cup 
Rice flour or Wheat flour - 2 tbsp 
Salt - to taste 
Chilli powder - 1 tsp 
Onions(finely chopped) - 1 tbsp 

PROCEDURE 
- In a bowl add in leftover chutney 
- Add in rice flour or wheat flour and mix evenly
- Add in salt, chilli powder and mix evenly. Add water to adjust the consistency of making dosa
- Add in chopped onions and mix evenly
- Make dosas like a uthappam cook till it becomes golden on both the sides 
- Serve hot 

STEP BY STEP PICTURES 




Take coconut chutney in a bowl






Add in rice flour or wheat flour and mix evenly 






Add in salt 








Add in chilli powder  






Add in onions add in little water to adjust the consistency to make dosas 





Heat the dosa tawa and spread the batter like thick dosa add oil on the sides 






Flip the dosa once it is cooked golden brown 






Once it is cooked on both the sides 

Serve hot

EGG MASALA

                                                        EGG MASALA 

Egg masala is one of my favourite dish. Egg masala goes well with many dishes. As always i do dishes in my own style. The same way i tried this egg masala in different way and it came out very well. So iam just sharing the receipe with you all. 

Lets get started 


INGREDIENTS 
Boiled egg - 4 
Egg (beaten) - 1 
Onions (finely chopped) - 2 
Tomatoes (finely chopped) - 2 
Green chillies (slited) - 4
Ginger garlic paste - 1 tsp
Cinnamon stick - 2 
Elaichi - 4 to 5
Cloves - 4 to 5  
Star anise - 1 
Chilli powder - 1 tsp 
Jeera powder - 1 tsp 
Coriander powder - 1 tbsp 
Salt - to taste 

TO GRIND 
Coconut - 1/2 cup
Cashew - 10 

FOR GARNSHING 
Coriander leaves - 1 tsp 
Pudhina leaves - 1 tsp 
Curry leaves - 1 strand 

PROCEDURE 
- Hard boil the eggs remove the shell and keep aside 
- In a kadai add in oil 
- Add in cinnamon stick,elaichi,cloves, staranise and saute for 10 seconds 
- Add in chopped onions and saute till it gets cook well 
- Add in ginger garlic paste and saute till raw smell goes off 
- Add in green chillies 
- Add in chopped  tomatoes and saute till it becomes mushy 
- Add in chilli powder, jeera powder, coriander powder and salt saute till raw smell goes off 
- Add in beaten egg and saute it 
- Add in water and allow it to boil 
- Once the water boiled add in boiled eggs 
- Allow it to boil for 30 to 40 seconds 
- Add in coconut cashewnut paste and allow it to boil till it reaches the consistency 
- Finally add in coriander leaves, pudhina leaves and curry leaves and allow it to boil 
- Serve hot with idiyappam, idli, dosa, etc.,

Add in coconut cashew paste and allow it to boil for 2 to 3 minutes 






Add in coriander leaves 







Add in curry leaves 







Add in pudhina leaves 







Allow it to boil for about 1minute 







Serve it hot with idiyappam, appam, idli, dosa,etc.,
